Miss T's West African Pepper Sauce /Ghana Shetor mix preparation


Preparation steps in pictures


  1. Make a paste: Thoroughly mix ½ cup of hot water with one 6oz packet of dry mix.
    Let stand for at least 2 minutes.
  2. Add oil: Add 1 to 1.5 cups of oil

(a) Stovetop 

  1. Simmer gently for 7 to 10 minutes, stirring often.


(b) Microwave

  1. Microwave for 4-6 minutes, only one minute at a time, stirring in-between.

4.  Let stand: Allow to sit for 2 to 3 minutes (optional). Enjoy!




  • Keep sauce at a low simmer (medium heat)
  • Add more oil up to a half cup according to your preference and uses
  • Make a batch of any size using 1 part sauce mix, a ½ part of hot water and 1 to 2 parts oil.

  • For a thinner/runnier sauce add two more tablespoons of water and keep refrigerated once prepared
  • Make it hotter by adding Miss T’s Red Pepper Blend to taste, a half tablespoon at a time

Alternative preparation options:

To make it your own, add Miss T’s Pepper Sauce Mix to your own leftover stew/tomato sauce instead of plain water.

  • Heat the stew/tomato sauce until bubbly (about ¾ cup of stew per 6oz packet).
  • Increase the amount of oil in the stew as necessary to at least 1½ cup per 6oz packet.
  • Mix in the pepper sauce mix and simmer medium low for ten minutes or until sufficiently reduced
